Farm to Table is a sonic documentary that traces the journey of raw ingredients from vineyards and farms to their final destination on our plates. The Slovenian tourism board has developed a system for ‘Green Certification’ of travel destinations throughout the country; and on a bike ride through the Soca Valley in Slovenia, producer and artist Charles Van Kirk and his wife Kerri sought out to record in some of these locations. They tracked down the sonic lineage of milk and grapes from the hillsides and vineyards where they are farmed to the cellars and restaurants where they are served as cheese and wine, finally ending up at the epicenter of fine dining - Hisa Franko restaurant.
Charles and Kerri recorded the sounds of wine grapes being harvested, pressed, fermented and aged at Kmetija Stekar Winery in the Goriska Brda region of western Slovenia. They also visited the famous cows of Tolmin, whose milk becomes a cheese that is aged and consumed at Hisa Franko. At the restaurant, Charles and Kerri recorded inside the kitchen during lunch service and inside both wine and cheese cellars. The sample pack contains exhaustive natural foley as well as human interaction with the elements via vocals and percussion. Charles then built percussive and tonal instruments using the field recordings and created an array of musical loops for the pack.
